Blueberry Muffin Breakfast Recipe!

 One Monday morning we were all so busy getting things together and organized for the week most of us forgot to eat breakfast.... and so by late morning everyone was Mama suggested we make Muffins. Therefore, Marissa and I marched into the kitchen, and whipping out the big old black cookbook, pulled out Mama's tried and true Blueberry Muffin recipe! We were slightly skeptical about how it would all work out because we had never made muffins on our own before, but no one else was capable or available at the time so it was up to us. So out came all the ingredients and the adventure began!

First problem we ran into was the overly frozen blueberries! It seemed they had melted at one point and then refroze with the blueberry juice mostly on the outside instead of the inside.
 So we dumped the whole thing out on the chopping block and ....chop, chop, chopped that thing to bits until we had the desired measurements.
 That was the only real setback regarding the preparation of the muffins and everything else went quite smoothly, though Marissa and I were highly doubtful they would turn out very good. The blueberries were unusually small and weird looking and when we mixed them into the batter the entire batter turned blue!  But we continued on laughing hysterically at all kinds of awkward reactions we made up in our heads that we might receive. 
When we were done whipping up the muffin batter we noticed a special extra recipe at the bottom of the page for a special sugar crumb topping and since it looked so much more yummier and tasty and easy, we decided to try it!
 By the time they were nearly done baking, the smell had already worked its magic around the house, causing many a little nose to come sniffing into the kitchen asking what that wonderful smell was. You can imagine the hype that transpired in the house when they were done baking!

 There was no end to the joyous smiles around the table as we dished out each person's plate and glass of milk!

Then of course there happened to be they were carefully divided among the large group and passed around while everyone renewed their mugs of milk!


Blueberry Muffin Recipe

1. Put about 1 tablespoon of vineger into a measuring cup...then put milk into measuring cup up to the 2/3-cup line. this makes "buttermilk"

2. Mix the following in a mixing bowl:
  • 3/4 cup oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
3. Now add the buttermilk and mix well.

4. Combine the following in a separate bowl and then add it all to the sugar mixture.

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
5. Stir in 2 cups blueberries

6. Pour batter into about 18 muffin cups.

7. Put 1 Tablespoon softened butter and a 1/2 cup of sugar into bowl......and mix together with a fork until you have crumbs

8. Spread the sugar/butter crumbs over the muffins evenly.

Bake at 375* for about 20 minutes.
